+This release from the Akashi-tai team is a rather luxurious and aromatic Sake. To begin this Sake is only produced in the Winter months and uses only the finest Yamadanishiki Rice.
For this Sake they mill the rice down to 38% before it is produced and to ensure that the finest quality the brew master watches over the Koji for 72 hours straight.... without sleeping!
The result of this is a Sweet full bodied Sake with notes of Honey, Pears and White flowers.
